Rice Pudding  
Hey, guys. We had a bunch of rice left over from dinner a few nights ago, so I decided to try my hand at rice pudding. I'd never made it before, but I found this really easy recipe online and modified it a little bit.

Awesome Rice Pudding

3 cups cooked white rice
3 cups milk (I use a can of evaporated milk and one cup of regular stuff, to make it creamier)
2/3 cup sugar
2 tbsp butter
1/2 cup raisins
1 tsp vanilla extract
Zest of 1 lemon, grated
1 tsp cinnamon, divided

Directions
Combine cooked rice, milk, sugar, and butter in a medium saucepan. Add raisins and vanilla (if you're using nuts, don't add them till you've taken the pan off the heat). Cook for 25 minutes until most of the liquid is absorbed. Mix in lemon zest and 1/2 tsp of cinnamon (and nuts, if you have them). Spoon pudding into a serving dish and dust with remaining cinnamon. May serve chilled or at room temperature.


I added craisins instead of raisins, orange zest instead of lemon zest, and chopped almonds, and had orange-cranberry-nut pudding. Great stuff!
